Cinnamon-Spice Power Muffins

A gluten-free muffin packed to the hilt! Be sure to measure the dry ingredients by weight, not volume.

Makes 18 large muffins

Dry Ingredients

6 oz (about 1 cup packed) Bob’s Red Mill Gluten Free Flour Blend

3 oz (about 1/2 cup packed) starchy gluten free flour blend, such as Compliments or XO Baking Flour

3 oz (about 1/2 cup packed) wild rice flour or starchy gluten free flour blend, such as Compliments or XO Baking Flour

2 ½ tsp baking powder

¼ tsp baking soda

1 tsp cinnamon

¼ tsp ground cardamom

¼ tsp ground nutmeg

1/8 tsp ground cloves

2 tbsp pumpkin seeds or sunflower seeds

2 tbsp raisins

½ cup dried cranberries

½ cup grated coconut

Wet Ingredients

1/2 cup milk

½ cup liquid honey

2 eggs

½ cup melted butter

1 Granny Smith apple, peeled and grated

finely grated rind of 1 lemon

juice of ½ a lemon
