Cornflake apple-berry crumble

The cornflakes give this crumble and interesting texture.

Makes about 7-8 ramekins or 1 cup Mason jars

2 Gala apples, peeled, cored and chopped

1 cup assorted berries, fresh or frozen

½ cup whole sour cherries or additional berries

2 tbsp cornstarch

¾ cup large flake oats (not quick or instant)

¾ cup cornflakes, lightly crushed by hand

2 tbsp chia seeds or poppy seeds or sesame seeds

1/3 cup packed brown sugar

¼ cup chopped walnuts

1 tsp ground cinnamon

½ tsp nutmeg

¼ tsp cardamom powder

1/3 cup butter, cut into chunks

Preheat oven to 350°F.

In a large bowl, combine the apples, cherries, berries and cornstarch. Toss well. Set aside.

In a medium bowl, combine the oats, cornflakes, seeds, brown sugar, walnuts, cinnamon, nutmeg and cardamom powder. Add the chunks of butter, and using your fingers, work the butter into the mixture until evenly distributed.

Fill each ramekin or Mason jar about ¾ full with prepared fruit. Top with a generous heaping of topping. Place the filled ramekins and jars on a cookie sheet.

Bake for 30 minutes, or until the filling is bubbly. Serve warm or room temperature.
