CJ’s Easy Garlic Aioli

2 large heads fresh garlic

1 cup mayonnaise

Salt and pepper, to taste

Trim about 1/4” inch off the top of each head of garlic. Wrap both in aluminum foil and place on the barbeque grate over the heat. Close the lid and roast for about 20-30 minutes, or until the heads are soft. Remove from the foil and let cool slightly. Squeeze the cloves into a medium bowl. Mash with a fork. Add in the mayonnaise and mix well. Season with salt and pepper, to taste. Refrigerate until ready to use.

Roasted Vegetables

Cut one red pepper into 4 large pieces

Cut four 1/2 inch thick rounds of white onion

Brush with oil and place on the barbeque grill, turning frequently until charred but not black.

JC’s Hot Honey Beer Mustard

1/3 Cup Whole yellow mustard seed

1 Tbsp Whole brown or black mustard seed (optional – this will make the mustard hotter)

1/4 Cup Beer (Preferably an Ale, try something local!)

1/4 Cup Cider vinegar

1 Tbsp Brown Sugar

3 Tbsp Honey

1/2 Tsp Salt

Combine mustard seeds in a small bowl. Add cider vinegar and beer to the seed bowl. Cover the bowl with plastic wrap and allow seeds to soak overnight. After the seeds have soaked, add the rest of the ingredients and mix well (If you prefer your mustard less sweet, start by adding 1 Tbsp of honey and add more to taste). Pour the mustard mixture into a food processer and pulse/blend to your desired texture.

JC’s Easy Pickled Red Onions

1 Whole Red Onion

1 Cup White wine vinegar

5-10 Whole All Spice Berries

5-10 Whole Pepper Corns

1/2 Tsp Salt

1/2 Tsp Sugar

1/2 Tsp Red Chili Flakes

1 Mason Jar

Optional:

Garlic Cloves

Whole Chilies

Fresh Herbs

Combine vinegar, All Spice, pepper corns, chili flakes, salt, and sugar into the mason jar. Slice the onion into thin rings and place in a strainer/colander. Blanch the onions by pouring a kettle full of boiling water over them. Immediately add the onions to the mason jar containing the vinegar mixture. Make sure the onions are covered by the liquid. Let sit for at least 30 minutes before eating. Store in a refrigerator for future use.
