A fun way to enjoy bacon and eggs!
Makes 2
Two 6” soft tortillas
2 large eggs
2 slices bacon
2 tbsp pico de gallo salsa or your favourite salsa
2 tbsp guacamole
2-4 sprigs fresh cilantro
2 lettuce leaves
Chipotle mayo with basil
Warm the tortillas in a fry pan or an oven until just warm. Meanwhile, in a skillet, cook the bacon and fry the eggs to desired doneness.
To assemble:
Spread each tortilla with guacamole. Top with a lettuce leaf. Top with one strip of bacon, then the egg. Drizzle with chipotle-basil mayo, pico de gallo or salsa, and cilantro sprigs. Serve with fruit salad or hash browns.
Chipotle Basil Mayo
¼ cup mayonnaise
½ tsp dried basil
½ - 1 tsp adobo sauce from chipotle peppers
pinch salt
