Serves 4-6

A taste of spring!

2 cups fresh green peas, blanched for 2 minutes, or use frozen, thawed peas

2 cups fresh corn niblets, blanched for 2 minutes, or use frozen thawed corn niblets

2/3 cup seeded, diced cucumber

2/3 cup thinly sliced green onion

2 tbsp chopped fresh mint leaves

1 tbsp chopped fresh parsley

5 radishes, thinly sliced

½ cup diced green pepper

grated rind of 1 lemon

salt and pepper, to taste

Combine all the above ingredients in a large bowl. Toss with dressing and serve. Can be refrigerated for several hours before serving.

Lemon dressing

Whisk together 2 tbsp olive oil, 2 tbsp fresh lemon juice, 1 small clove garlic.
