Miso is a fermented soybean paste that is somewhat salty but very delicious. Don’t salt your salad when using this dressing. Feel free to get creative and try different salad ingredients.

Makes enough dressing for 2-3 salads

Prepare individual salad plates with a combination of fresh, cooked and pickled ingredients.

Lettuce

Roasted red pepper

Roasted vegetables such as halved Brussels sprouts and carrots

Portabello mushrooms, sliced and fried

Olives, lacto-fermented pickles such as kosher dills and/or sauerkraut

Sliced purple turnip

Sliced avocado

Cucumber, tomato and other fresh vegetables of your choosing

Miso dressing

Whisk all together.

2 tbsp miso paste (red or white)

2 tbsp oil of your choice

1 tbsp sesame oil

1 tbsp rice wine vinegar

2 tsp or more water to thin

1 clove garlic, mined

1 tsp light soy sauce or tamari

1 tsp mirin or maple syrup
