Quinoa salad

Add poached salmon or chicken to make it a full meal!

3 cups cooked quinoa

1 avocado diced

1 cup cherry tomatoes halved

1 can drained & rinsed black beans

1 can peaches & cream corn with juice

3 green onions sliced

1/2 cup cilantro chopped

Dressing:

zest of one lime & 1/2 cup of lime juice

1 tsp chili powder

1 tsp cayenne powder

1 tsp coriander

1 tsp paprika

1 tsp good salt

Cashew cream - recipe follows

Cook quinoa according to package instructions....1 cup quinoa to 1.75 cups water. Stir in the next 6 ingredients. Combine all the ingredients for the dressing in a bowl and whisk. Add dressing to quinoa stuff and mix well. Top with cashew cream!

Cashew cream:

1 cup raw cashews

1/4 cup - 1/2 cup water or coconut milk (depends on how thick/thin you want it)

1/2 tsp sea salt

Completely cover one cup of raw cashews in water and let sit over night. Drain and rinse cashews. In a small food processor or blender than can liquify stuff add the ingredients and giver heck until the cashews are creamy. Insanely good on pretty much everything!
