Sesame-crusted seared Ahi Tuna

Serves 2 portions

Ingredients

8 oz. Ahi Tuna

50 grams Sesame seeds toasted (Black and white)

100 ml soy sauce

10 grams fresh ginger grated

30 ml ponzu sauce

10 ml Truffle oil

1 English cucumber (sliced)

Micro greens and baby cilantro

Wasabi caviar (tobiko)

Salt and pepper to taste

30 ml Vegetable oil

Method

Marinade tuna in soy and ginger for 10 minutes

Remove from marinade and coat each side with Toasted sesame seeds

In a hot pan add oil and sear tuna from each side for a minute on each side.

Remove from pan and let rest for a couple of minutes.

Slice tuna. Place over sliced cucumber, top with ponzu sauce, truffle oil , garnish with Tobiko and micro greens.
