Spruce tips are a delicacy of spring and are the new growth of spruce tree, although pine and fir tree tips are also equally as delicious. Early to mid-June is usually the ideal time to pick them. Choose small tips to get the most citrus flavour. Be sure to remove any brown papery bits and discard any hard needles. Spruce tips are also delicious added to stir-frys, steeped into a tea, and made into a jelly.

Spruce tip vinegar

2 cups mild flavoured vinegar such as white wine vinegar

1 cup roughly chopped fresh spruce tips

1 tsp peppercorns

Combine all the ingredients in a non-reactive container, such as a large Mason jar. Cover and let sit at room temperature for 10 days. Strain and transfer vinegar to a clean bottle.

Spruce tip aioli

1 cup mayonnaise

¼ cup finely chopped fresh spruce tips

1 small clove garlic

pinch salt

Stir all ingredients together in a small bowl. Cover and refrigerate for 1 hour before serving so flavours can meld together.
