A fabulous condiment perfect anytime of the year! Make 1-2 days before consuming.

Makes about 1/3 cup

¼ cup mustard powder

½ tsp salt

2 tsp brown sugar

1 small clove garlic or half a large clove, minced (do not use a large clove as it makes the mustard bitter)

½ tsp potato starch

¼ cup water

1 tbsp finely chopped fresh tarragon

In a small bowl, whisk together the mustard powder, salt, sugar, garlic and potato starch. Whisk in the water (mixture will be thin). Microwave for 1 minute. Whisk well and stir in the tarragon. Transfer to a small container and refrigerate for 1-2 days so mustard flavour can meld and sharpness can calm down.
