Lemon-Lime Posset

This is one of the easiest desserts around. It will take about 15 minutes to make. Terrific for a light dessert after a heavy meal.

Makes 6-8

2 cups 35% cream

¾ cup sugar

Bring to a boil. Stir constantly for 3 minutes. Do not let boil over.

Remove from heat and stir in 4 tbsp lemon juice and 4 tbsp lime juice. Let stand 10 minutes.

Pour through a sieve lined with 2 layers of cheesecloth. Carefully pour about ½ cup into dessert glasses. Chill 4 hours or overnight. Garnish with fruit and serve with biscotti.
