Spiced Hot Chocolate

This is a spiced-up version of the tried-and-true recipe in Gay’s Cook’s cookbook called Mrs. Cook’s Kitchen.

Serves 2

2 tbsp sifted unsweetened cocoa

2 tbsp maple syrup

2 cups milk

2/3 cup heavy cream (35 %)

1 oz dark chocolate (75%), chopped

½ tsp ground cinnamon

¼ tsp ground ginger

dash or two of ground cloves

whipped cream to garnish

caramel drizzle to garnish

chocolate shavings to garnish

In a medium saucepan over medium heat whisk together the cocoa, maple syrup, milk, cream, cinnamon, ginger and cloves. Warm through until the chocolate is melted and the cocoa is fully incorporated. Bring to a bare simmer. Remove from heat and transfer to two mugs. Top with a scoop of whipped cream, drizzle with some caramel and top with a few shavings of chocolate.
