Beets are delicious raw. This is a terrific salad that keeps for days.

Serves 4

  • 3-4 cups grated raw, peeled beets
  • 1/3 cup pine nuts
  • ¼ cup finely diced red onion
  • 1 handful fresh chervil or fresh tarragon leaves, or any other fresh herb
  • 3 large beet leaves, ribs removed and thinly sliced (optional)

 

Dressing

  • 6 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 clove garlic, minced
  • ½ tsp salt
  • ½ tsp pepper
  • 2 tsp maple syrup

In a bowl combine the grated beets, pine nuts, onion, herbs and beet leaves.

In a separate bowl, whisk together all the dressing ingredients. Toss with the salad and serve.
