Beets are delicious raw. This is a terrific salad that keeps for days.
Serves 4
- 3-4 cups grated raw, peeled beets
- 1/3 cup pine nuts
- ¼ cup finely diced red onion
- 1 handful fresh chervil or fresh tarragon leaves, or any other fresh herb
- 3 large beet leaves, ribs removed and thinly sliced (optional)
Dressing
- 6 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 clove garlic, minced
- ½ tsp salt
- ½ tsp pepper
- 2 tsp maple syrup
In a bowl combine the grated beets, pine nuts, onion, herbs and beet leaves.
In a separate bowl, whisk together all the dressing ingredients. Toss with the salad and serve.
