Oil and Vinegar Coleslaw
This is my variation on a recipe I picked up during my time living in Sweden!
This salad was served anytime you ordered pizza.
Serves 4 people
1/2 a cabbage, thinly sliced
1 large carrot, grated
1/4 cup coarsely chopped fresh parsley
2 tsp celery seed
6 tbsp olive oil
4 tbsp apple cider vinegar
2 tsp sugar
3/4 tsp salt
1 tsp freshly ground black pepper
1. Combine the sliced cabbage, grated carrot, chopped parsley and celery seed in a large bowl.
2. In a small bowl, whisk together the olive oil, vinegar, sugar, salt and pepper.
3. Pour the dressing over the salad and toss well. Let stand about 1 hour before serving.
