Amazing with chicken, pork and meatloaf.
Makes about 1 ½ cups
- 1 cup chopped rhubarb, cut into 1/2“ pieces
- ½ an onion, thinly sliced
- ½ a peeled Granny Smith apple, chopped
- 1 clove garlic, minced
- ¼ cup honey
- 1 tsp ground coriander
- 1 tsp curry powder
- 1 tsp grated fresh ginger
- Pinch salt
- 1 tbsp malt vinegar
In a medium saucepan, sauté the onion and garlic in 1 tbsp oil over medium heat. Add the rhubarb and apple. Stir and let cook about 1 minute.
Add the honey, spices and vinegar. Let gently simmer, uncovered, until rhubarb is very soft, about 8 minutes. Stir well. Taste and adjust seasonings.
