Curry Vegetable Soup with Orzo.

Some of you might wonder about the orzo in this Indian-style soup since this pasta is Italian but this pasta works perfectly. This is a great soup to serve when you¹re trying to introduce a soup lover to something new and slightly exotic!

Serves 6-8

 

2 onions, diced

2 carrots, diced into 1Ž2² cubes

1 stalk celery, diced

2 tbsp canola oil

1 tbsp curry paste, Indian style

4 cups chicken broth

One 24 oz tin diced tomatoes

1Ž2 cup orzo pasta

One 400 ml can coconut milk

2 tbsp chopped fresh cilantro

 

In a large Dutch oven, sauté the onions, carrots, and celery in the canola oil until soft, about seven minutes. Add curry paste and cook, stirring constantly, for 1-2 minutes. Add chicken broth, diced tomatoes and orzo.

Bring to a boil and let simmer for 20 minutes. Add coconut milk and fresh cilantro and heat through. Do not boil. Serve with crusty bread.

 

Thai Variation: Substitute Thai yellow curry paste for the Indian-style curry paste. With the coconut milk, add 1 tbsp brown sugar and 1 tbsp fish sauce.
