Double Chocolate Brown Butter Brownies

Makes one 9” x 9” pan

These are simply delectable!

1 cup salted butter

1 2/3 cup granulated sugar

1 cup cocoa powder

4 eggs

1 tbsp vanilla

1 1/3 cup flour

1 tsp baking powder

½ tsp salt

1 cup walnut halves

½ cup semi-sweet chocolate chips

Preheat oven to 350°F. Grease a 9” x 9” pan.

In a saucepan, over medium heat melt the butter. Whisking occasionally, continue to simmer the butter until small brown flecks begin to show on the bottom of the pan. The butter will turn a nutty brown. Remove the pan from the heat.

Whisk in the sugar, then the cocoa and then the eggs, one at a time. Whisk in the vanilla.

In a small bowl, combine the flour, baking powder, and salt. Using a spatula, stir the flour mixture into the chocolate mixture until almost mixed but there are streaks of flour. Stir in the nuts and the chocolate chips.

Transfer batter to the greased pan. Bake for about 35 minutes, or until a toothpick inserted into the centre comes out with small bits of brownie. Remove from the oven and set on a rack to cool. Drizzle all over with the Brown Butter Glaze (recipe below).

 

Brown Butter Glaze

¼ cup salted butter

1 tsp vanilla

1 cup icing sugar

2 tbsp (approx) milk

 

Heat the butter in a saucepan over medium heat. Whisking occasionally, continue to simmer the butter until small brown flecks begin to show in the bottom of the pan. The butter will turn a nutty brown. Remove the pan from the heat.

Whisk in the vanilla (be careful – the mixture will bubble up and spit). Together whisk in the icing sugar and milk. Whisk until smooth and the consistency of buttermilk. Using your whisk or a fork, drizzle the glaze all over the brownies.
