Serves 6
 
1 roasted supermarket chicken
12 small or medium soft tacos, wheat or corn
1 ripe avocado, diced
1 container hummus
1 container tzatziki
1 cucumber, thinly sliced
1 tomato, halved and sliced
1 jar salsa
1 container baby kale, arugula or micro greens
 
 
Toast the tortillas, one at a time, in a dry skillet over medium heat. Set aside and keep warm.
 
Meanwhile, removed the skin from the chicken and tear the meat into bit size pieces. Set aside.
 
Set out the diced avocado, hummus, tzatziki, cucumber, tomato, salsa and kale.
 
To prepare, spread the centre of each tortilla with the hummus, then top with several slices of chicken, then some diced avocado, and sliced tomato. Spoon over the salsa and tzatziki and top with the kale. Roll up and serve.
