Sweet & Salty Kettle Corn

 

1/3 of a cup to ½ a cup of popcorn kernels

¼ of a cup of sugar

1 Tbsp. of coconut oil

½ Tsp. to 1 Tsp. of salt

1 Large Pot

 

Place a large pot over medium high heat. Add the oil to the pot, making sure the oil evenly coats the bottom. Add the popcorn kernels and sugar. Stir quickly to combine the ingredients. Immediately cover the pot with a lid and reduce heat to medium. Constantly shake the pot every 10 seconds or so to prevent the sugar from burning.

The popcorn will start popping within a few minutes (make sure you’re holding the lid down!). Keep shaking the pot to prevent the popcorn from burning. Once the popping slows down (a pop every 20-30 seconds – use your best judgment) immediately remove the popcorn from heat and pour into a large bowl.

Lightly salt the popcorn and toss to combine. Repeat this step two or three times, adding salt to suit your taste. Make sure to salt immediately after the popcorn is poured in the bowl. The sugar coating will still be hot, allowing the salt to stick easily. Enjoy!
