4 cups different mushroom varieties
2 tbsp butter
1/4 cup white wine
1/8 cup beef stock or veggie stock
1 tbsp brown sugar (optional)
salt & pepper to taste
fresh herbs &/or sprouts to garnish
Balsamic reduction to finish
How to:
In a hot pan throw your butter & mushrooms in the skillet....stir them around & get them feeling groovy....adding the brown sugar (optional) & fresh herbs. When they are simmering add wine/stock/salt & pepper & let them cook down until the juice is pretty much gone. Keep stirring! Remove from heat & use the mushroom mixture as a topping on crostini/soup/stew/pasta/meat or anything else you can think of! Garnish with fresh sprouts & balsamic reduction. Enjoy!
