Matt Dominguez Breakfast Tacos

A childhood favourite that Matt now serves to his kids.

Makes 6

6 eggs

6 strips of bacon

6 soft flour tortillas

shredded cheese

taco sauce

In a medium bowl, whisk the eggs.

In day small skillet, toast the tortillas until crisp on the outside. Set aside on a covered plate to keep warm.

Meanwhile, in a skillet, fry the bacon until desired doneness. Remove and let drain on paper towel. In the same skillet, fry the eggs until scrambled.

To assemble, place some cooked egg on the centre of the tortilla. Top with a strip of bacon, shredded cheese and some taco sauce. Wrap and eat while warm.
