Jam

1 part fruit

1/2 part sugar

1/4 part water, optional.

Choose a pot depending on the size of batch you are making.

Put the fruit & sugar+water in the pot and stir. Turn to medium -high heat until mixture comes to a boil. LOwen heat and simmer until temperature is 105 C.

*Don't use water if you are using frozen fruit.

Salad dressing

1 part acid/vinegar

1/2 part jam

3 parts camelina oil

Salt & pepper

Use a blender to emulsify for a smooth dressing.

If you want to do it by hand, use a bowl and add your jam + acid and slowly add in the oil on a stream, whisking until dressing comes together. Season with salt and pepper.
