Apple-Oatmeal-Barley Muffins

These are equally delicious made with regular all-purpose flour in place of the barley flour. Feel free to add 1 tsp cinnamon to the batter, if you wish, although omitting it creates an muffin with lots of apple flavour.

Makes 12 large muffins

1 ½ cup barley flour*

1 cup large flake oats

2 tsp baking powder

½ tsp salt

1/3 cup sugar

1 cup milk

½ cup melted butter

1 egg

1 grated apple

½ cup dried fruit or nuts such as raisins, currants or walnuts

Preheat oven to 400°F. Line a muffin tin with paper liners or grease well with butter. Set aside.

In a medium bowl, whisk together the flour, oats, baking powder, salt, and sugar.

In a separate bowl, whisk together the milk, melted butter, egg and grated apple. Pour into the dry ingredients and mix until just combined. Quickly stir in the dried fruit. Sprinkle the tops with a few oat flakes. Scoop into the prepared muffin tin. Bake for 18-20 minutes.
