Salad ingredients
1 cup cooked black beans
1 cup cooked green lentils
1 cup cooked chickpeas
1 ½ cups cooked pearl barley (1/2 cup uncooked)
2 cups spinach, chopped
1 ½ cups diced red pepper
½ cup dried cranberries, chopped
2 tbsp green onion, thinly sliced
Vinaigrette
¼ cup red cider vinegar
¼ cup canola oil
2 tbsp whole grain mustard
salt and ground black pepper to taste
Garnish (optional)
¼ cup toasted sunflower seeds
Directions
1. Cook the pearl barley and cool (1/2 cup barley with 1 ½ cups water or chicken stock)
2. Mix all the ingredients together for the salad.
2. Whisk the vinaigrette until blended.
3. Pour over salad and toss gently. Add garnish and serve.
